Mapo Tofu Ramen is a creative fusion dish that brings together two beloved classics: the rich, spicy depth of Mapo Tofu and the comforting slurpability of ramen noodles. Instead of a traditional broth, the noodles are served in a Mapo Tofu sauce, creating a bold and satisfying bowl unlike anything else.

One of the best things about this dish is how well it holds its heat. The sauce is slightly thick and coats the noodles beautifully, which means your bowl stays warm much longer than a typical ramen. Perfect for cold winter nights when you need something that warms you from the inside out.

The key to that signature thickness is the water and potato starch mixture, which gives the sauce its silky, clinging consistency. If you skip this step, the sauce will be thinner and the noodles may tangle more easily, so it is worth the extra moment to get it right. The good news is that this sauce is incredibly versatile. It works just as well with udon or soba as it does with ramen, so feel free to use whatever noodles you have on hand.

What you'll need

  • 150g ramen noodles
  • 60g ground meat
  • 15g miso
  • 15g sugar
  • 15g soy sauce
  • 10g doubanjiang (spicy bean paste)
  • 10g Chinese chicken broth powder
  • 10g potato starch
  • 15g sesame oil
  • Roasted sesame, to taste

How to make it

Step 1

Heat the sesame oil in a frying pan over medium heat and sauté the ground meat until cooked through.

Add the miso, sugar, soy sauce, doubanjiang, chicken broth powder, and 200ml of water. Stir to combine and bring to a boil.

While the sauce is cooking, dice the tofu and add it to the pan.

In a separate large pot, bring water to a boil and cook the ramen noodles according to the package instructions.

Drain the noodles and set aside.

Ladle about half of the mapo sauce into a serving bowl, then stir in the water and potato starch mixture to reach your desired thickness.

Add the cooked noodles to the bowl, making sure they are not tangled, then pour the remaining mapo sauce over the top.

Finish with a sprinkle of roasted sesame seeds and serve immediately.
