Producido en esta cervecería de Gifu con shochu de arroz autodestilado y sake elaborado en casa como base de mezcla, este umeshu se prepara con ciruelas ume maceradas en el espíritu de la casa y equilibradas con azúcar cande. La filosofía de producción interna de la cervecería, aplicada a todas las categorías, se extiende a cada ingrediente de este licor.
