Description

Classified as futsushu but brewed muroka, nama, and genshu, meaning unfiltered, unpasteurized, and undiluted, then aged in the brewery for over three years. The extended aging brings out gentle notes of ripe banana, dried fig, and caramel on the nose, with a lean, savory palate touched by mild miso and dried fruit. At 20% alcohol by volume it carries real weight, finishing sharp and dry with a long umami tail.
