Fukubotan von Fukubotan Shuzo, gegründet 1868 in der Stadt Kawanishi im südlichen Okitama-Gebiet von Yamagata, nutzt unterirdisches Quellwasser aus der Iide-Bergkette, die dieses sake-produzierende Tal mit einigen der reinsten Wässer der Präfektur versorgt. Gebraut mit Miyama Nishiki, einer Sake-Reissorte für Kaltklimata, die in Yamagatas strengen Wintern gedeiht, spiegelt er die lange Tradition des sauberen, raffinierten Sake-Herstellens der Okitama-Region wider.
