DOBUROKU Series MIZUMOTO ist ein Ausdruck der Doburoku-Serie, der die Mizumoto-Hefestartmethode verwendet, eine traditionelle Technik, die auf wilde Hefen und natürlich vorkommende Milchsäurebakterien in der Brauereiumgebung setzt, um die Fermentation einzuleiten, und diesem ungefilterten Sake einen unverwechselbaren Charakter verleiht.
