"Matsuo" wants to be with the sake of sake named after the brewing god with prayer and gratitude, and continues to be brewed in a hand -built method that has continued since the establishment of the Meiji era.

History

1875
Founded in September 1875 (Meiji 8).
1902
Registered the trademark "Matsuwo" in 1902 (Meiji 35).
1917
Registered the trademark "Togakushi" in 1917 (Taisho 6).
2005
Converted all premium-designation sake to junmai (2005 brewing year); competition entries also shifted to junmai daiginjo.
2007
Shifted to using 100% Nagano-grown rice for all sake (2007 brewing year).
2008
Won a gold medal for junmai daiginjo at the National New Sake Awards, using 100% Nagano-grown Miyama Nishiki rice.
2018
In the first year the then-unregistered rice variety "Shinko-shu No.545 (Sankei Nishiki)" was eligible for competition entry, its junmai daiginjo won a triple crown of awards.
2020
In late March the rice variety they had been trial-cultivating and brewing with since the early stage was officially registered as "Sankei Nishiki"; from that brewing year they began using 100% contract-grown Sankei Nishiki.
