Hanagoi is produced by Akashi Sake Brewery, a family-owned micro-brewery that has operated in the fishing town of Akashi, Hyogo Prefecture since 1886, drawing from local natural springs and cultivating Yamadanishiki rice for complexity of flavor. The brewery gained recognition as an innovator when in 2002 it became the first in Japan to brew genmai (brown rice) sake, a batch that was aged for several years before release in 2005. Hanagoi represents the brewery's accessible, food-friendly range, available in styles from junmai to sparkling sake.
