The Berkeley brewery uses Sierra Nevada snowmelt water and Sacramento Valley rice, applying traditional Japanese craftsmanship alongside modern production technology to an annual capacity that has grown to 7,500 kiloliters. The Hana flavored sake line launched in 2006 as a dedicated innovation within the brewery's portfolio, responding to demand for new expressions beyond traditional sake styles.
