Fukugen Shuzo, founded in the Horeki era (1751) and based in Ikeda Town, Kitaazumi District, Nagano Prefecture, draws its brewing water from the cold, clear wells fed by the Northern Alps and grows much of its sake rice in-house using reduced-pesticide farming. Fukumimi is the brewery's modern premium line, fermented slowly at low temperatures to develop what the brewery describes as rich, full-bodied flavor with beautifully clear aroma. The range covers pure rice styles from junmai daiginjo down to a lightly sparkling format designed for pairing with international cuisine.
