Fukugen Shuzo, founded in 1758 in Ikeda Town, Nagano Prefecture, sits beneath the Northern Japanese Alps and has been led by the same Hirabayashi family for eighteen generations. The brewery is a self-described boutique producer, limiting total output to around 4,000 bottles annually to maintain absolute control over quality, and it specializes in aged sake matured in its alpine-cooled cellar. The Azumino label represents the beauty of the Azumino valley, drawing on natural spring water that flows from the high peaks surrounding the brewery.
